Ginger Orange Sandwich Cookies

Christmas baking is all about the piping! Who’s still doing some Christmas baking today?
We chose to combine ginger, chocolate and orange together. Combining two bold flavors together can be difficult, one will have to take the lead, understand how to use each ingredients.
Ginger can be grated fresh, cut into slices and soak in simple syrup or in a dried powder form. Orange can be zest, juicing it’s fresh juice or a concentrate extract. Chocolate can be melted, using chips or there is cocoa powder. Our first trail, we used fresh grated ginger into our chocolate cookie by cocoa powder, and use orange juice for the icing. Note that it’s not idea to use all three flavours in a liquid form, the ending result might be soggy. We thought the fresh ginger was spicy on the first day, but it was less powerful as the days went by, so we ended up switching from fresh ginger to powder. It was well distributed and the overall flavour was more consistent.
