Double Baked Matcha Croissant

Our Double Baked Almond Croissant has always been the star of the show. It inspired us to create another item that would offer the same texture and crunchiness on the outside yet remain soft on the inside.

Matcha powder is relatively easy to incorporate into dry ingredients and it has many health benefits. But choosing the right matcha powder is the hard part. Be aware that many store bought powder are mixed with sugar and milk powder. A higher grade of matcha doesn’t necessarily mean it’s better for baking either. Our croissant recipe already uses butter and milk which consists of a high percentage of dairy, so using a premium grade matcha gives it a vibrant color and doesn’t over power the dairy while maintaining the flavour of the matcha.

Double Baked Matcha Sesame Croissants where we fill the croissant with sesame paste that is mixed with sugar, eggs & matcha and then baked again! Crunchy on the outside and gooey on the inside! These will be available at both @monogramco cafes starting tomorrow.
